Hello and welcome to my Food & Health blog. My name is Agneta and I´m Swedish. Since 2011, I have been living in the U.S. along with my husband and our two daughters. My purpose in writing this blog is to help people understand the difference between good and bad food and how this affects your health. My concern is that mainstream media is not telling the whole truth about healthy food for a number of reasons…money, money, money.

My interest in food and health started in April 2006 after having been to a presentation about “Chemicals in Food”. This presentation was an eye opener for me. I still remember when the presenter said with a firm voice – READ THE LABELS. A general rule, is that the fewer the ingredients, the better food. As an example he told us about margarine and how bad it is for us; that it is a high-tech product with a long list of bad ingredients. He compared this to butter that has only two natural ingredients – cream and salt, much better for you. As professor Joan Gussow says – “As for butter versus margarine, I trust cows more than chemists”. The presenter also told us about the danger of eating low fat products, because the food industry uses sugar and chemicals to replace the natural fat.

If you buy a car with a gas engine and you give it diesel, the wrong kind of fuel, the engine will break. It is exactly the same with the human body. If you give your body the wrong kind of fuel/food, sooner or later it will break. It is my responsibility as a parent to give my children the best natural food possible so that they will live a long and healthy life. In Europe and Canada it is illegal to give cows artificial hormones (rBGH), given so they produce more milk, but in the U.S. it is legal. Artificial hormones are added all the time, and your milk will most likely contain it unless the milk carton is labeled “No hormones rBGH.” What will happen to our children if they continue to drink and eat a lot of dairy products and eat meat filled with artificial growth hormones…acne, early puberty, even cancer? Also, if we constantly give our children fast food, candy, soda, juice, and other products filled with sugar, wheat, chemicals and artificial coloring, we will only shorten their lives. According to studies our children will be the first generation who will die earlier than their forebears.

The main task of food is to form new cells to replace old dying ones. All of our intestinal cells are replaced in just two weeks and it takes only four weeks to replace all our skin cells. The human body is amazing; it will heal itself if we give it the right fuel. This is what I want to tell you about.

The Food Revolution

There is a Food Revolution going on in the Scandinavian countries. People have started to ignore current dietary advice and have instead embraced a new way of eating. They have discovered how easy it is to feel good, get rid of disease and extra pounds by following the LCHF (Low Carb High Fat or Low Carb Healthy Fat) Lifestyle, also called The Scandinavian Diet. When adopting this lifestyle you eat mainly natural foods like meat, poultry, fish, shellfish, eggs, vegetables, cheese and natural fat such as butter. These foods do not increase your blood sugar to any great extent, nor your insulin levels. Another feature of this diet is to eat until you feel full. This is the food intake that our body is designed for and prefers. It uses fat for fuel instead of sugar. LCHF is back to basics and it is naturally gluten-free. It is a lifestyle for most people but especially for people who are over weight or are pre diabetic/diabetic. I just read an amazing success story on the Swedish dietdoctor blog, and I would like to share it with you:

“I’m 82 years old and I have had diabetes type 2 for about 38 years and have taken insulin for about 13 years. The left eye was ruined by this sugar disease. On the 1st of September 2010 I started with the LCHF Lifestyle as a last resort. At the time, I was taking eight different drugs and over 80 units insulin. Now in December 2012 the eye is almost completely restored and I take only two drugs for high blood pressure and a maximum of 40 units insulin. According to the doctor I have reduced my blood sugar by 50%. My family thinks I am 10 years younger. Personally, I feel that my “journey” with the LCHF Lifestyle is not over yet and my health is improving despite my age and many years of illness. I can feel the many improvements in my body function. I want to thank you (names) for your persistent work to improve the lives of so many people including myself.” IAC

Diabetes “sugar disease”

Isn’t that a wonderful success story! On the other hand, it is tragic that she suffered for so many years eating bad carbohydrates based on government and drug company misinformation. How many more years do people have to suffer and die an early death before the governments in each country will take their share of responsibility? It is a shame! Drugs that lower our blood sugar are unnecessary if people avoid food that increases blood sugar levels in the first place. But, because money is the main objective for food and drug companies, not health, we are told to eat food that will increase our blood sugar levels. We will get more and more sick, which requires us to take more and more drugs. It is hard to make money off healthy people. In 1985, there were 30 million diabetics in the world, in 2011 366 million and the forecast for 2030 is 552 million diabetics. Almost ten million new cases per year, and many are children, unless we change our eating habits! Over 40% of death certificates in the U.S. now list diabetes as the cause.

Food and drug companies

There is also a trend to scare people into taking drugs, for instance, drugs for high cholesterol. Very often these people start to feel more ill due to the side effects of the drugs; pains in the legs and a decrease in memory function from the statins etc. You can read about the side effects of common drugs here. I think we have been misled, or even deceived, for 30-40 years. We have been told to eat low fat products, bread and other grains and to use bad vegetable oils. The food and drug companies and their lobbyists are controlling what we are told about food and health in order to direct us into buying their food and drugs. Do not believe the advertisements and the commercials. I am astonished that people in the governments of each country are more concerned about company profits than the health of their citizens. I understand that it is about jobs and about protecting the food industry, but why subsidize GMO corn and soy, for example? Shouldn’t public health be the most important issue? As Winston Churchill said “Healthy citizens are the greatest asset any country can have.”

When it comes to studies, be aware and critical. The big food and drug companies have their own professors, dieticians etc. and the universities and the doctors need their money. Before the start of many of the studies Big Food and Big Pharma have already decided what they want the study to show. Just use your logic and follow the money.

Do not let fast food and beverage companies into our school system and sponsor teams or sporting events. The health of our children is the most important issue.

My story

I had difficulty losing weight after giving birth to my second daughter. I thought I ate good natural food like whole wheat bread, whole wheat pasta and whole wheat rice, but I did not lose weight. I had been reading about the LCHF (Low Carb High Fat) Lifestyle for a while and one day in 2008 I switched over. I took away sugar, wheat, potatoes, pasta and other bad carbohydrates from my meals, and it was not even hard. I already used butter, heavy cream, and crème fraiche in my cooking but I started to eat even more vegetables than I had done before. The hard part, because I started so abruptly, was that it took about three weeks for my body to adjust and ”detoxify.” So, for these three weeks I was very tired, had headaches and my whole body hurt, similar to flu symptoms. I should have taken it more slowly over a longer time frame.

Very soon my digestive system became much calmer, my skin was not as dry as it used to be and I had much more energy. But because I lived a very stressful life as a businesswoman with small children, it took a few years before my body could trust me to let go of the excess weight. Finally after a few years I lost about 4 inches (10 cm) around my waist. Bad carbohydrates, like sugar and wheat, stress including over exercising, anxiety and lack of sleep are the human body´s worst enemy.

I do not have any of the metabolic syndrome diseases like diabetes type 2, but for people with those diseases, the change can happen very quickly so it is important to keep in contact with your MD about controlling insulin levels. When you watch the videos in our video section you will see that food and health go hand in hand. We know that cancer cells love sugar and other carbohydrates. That is why there are hospitals in Germany, and around the world, that provide a meal plan similar to LCHF to their cancer patients with great results. Vist the Health section for more information.

I now have low risk factors, and I hope they will stay that way. Eating natural foods tends to lower the LDL ”bad” cholesterol, triglycerides, insulin levels and the CRP inflammation marker and it tends to increase the HDL ”good” cholesterol and stabilize the blood sugar levels. Recently there have been some very good episodes of The Dr Oz Show. Two ”must see” episodes are about cholesterol and wheat. Finally, Dr Oz is on the right track!

Allergies

The most common causes of food allergy come from:

  • Gluten/wheat
  • Milk
  • Eggs
  • Tree nuts (sesame seed allergy more and more common)
  • Peanuts
  • Soybeans
  • Fish/shellfish

According to the bestselling book “Wheat Belly,” just over two million people in the U.S. have celiac disease, which equates to 1 in every 133 people. Yet less than 10 percent of them know it. I have just finished reading Dr William Davis’ new book “The Wheat Belly Cookbook” which I find is a very good and informative book, with plenty of recipes. Read more about it under Wheat.

Supplements

Did you know that some of the most “milk-consuming-countries,” USA, Sweden and Finland, are also the countries with the most osteoporosis per capita? Calcium is not easily absorbed into your bones on its own. Calcium needs an even level of magnesium and vitamin D to be absorbed properly. Vitamins and minerals are important for us and many people have a lack of magnesium and vitamin D etc., and probably need to take supplements. In order to naturally get vitamin D from the sun, everyone should be out in the sun for 20 minutes. During the midday of summer, showing as much skin as possible, and not cover themselves and their kids with a thick layer of sunscreen filled with chemicals. Let the skin slowly get used to the sun and use clothes, shades and perhaps just a little natural sun screen on the shoulders to protect the skin from burning and you will get your own natural protection against cancer and get a lot of vitamin D. The key is to never get burned. Who told us to cover ourselves with sunscreen filled with chemicals? Again, follow the money.

Exercise

Do you still believe in the lose weight hypothesis “eat less, exercise more” or “a calorie is a calorie”, then look at the video “The Skinny on Obesity.” There is new science that indicates otherwise. Yes, exercise is very good and important for us because more exercise means more muscle and more muscle means better insulin sensitivity, but it is not necessary for weight loss. What? I will repeat it – EXERCISE IS NOT NECESSARY FOR WEIGHT LOSS. A person in a wheel chair can lose weight without exercise, and on the other hand, many overweight people are quite health conscious. If you eat natural food that lowers your blood sugar and your insulin levels, sooner or later depending on whether you have been yo-yo dieting a lot, or are stressed and anxious, or not, you will lose weight, or gain weight if that is your wish. If you are heavy, try carbohydrate restriction first and lose some weight and then become more active.

As I said, exercise is very good and important for you. If you do not exercise often, a good goal is to start with five minute workouts three times a week and increase it up to 20-30 minutes three times a week when you are ready for it, or perhaps 15 minutes every day. Just walking about 20 minutes three times a week will make a big difference. Strength training (weight lifting) is also very good. Just get moving, but not so much that you burn yourself out.

Yes, athletes are eating this kind of food too because sugar, refined flour and chemicals do not build a strong body. Björn Ferry won an Olympic gold medal in 2010 in biathlon, Jonas Colting has won several medals in the World Championship in Triathlon and Mattias Ribbing won the Memory Championship in Sweden in 2009, while following the Natural Food/LCHF food plan. Save our planet

We are not only killing ourselves with bad food and sodas, we are killing our planet too. All of us can make a big difference just by making the right choices. I want my children and their children to be able to grow up in a good and safe environment. Read more under Save.

I have gathered videos and books on this blog so that you are able to make up your own mind. The most important thing though is that you understand “The Key” to avoiding disease and/or losing weight. As you will see in the video “The Men who made us Fat, part 1,” even a person who is lean but eats a lot of fast food, sugar, artificial sweeteners, and wheat can have large amounts of visceral fat around the organs. Scary, because visceral fat drives inflammation and diseases, and is the fat that kills us. Read more about it on the Health page.

I am not a MD or a professor but I hope this blog will be an eye opener for you. This blog is based on my own experiences, beliefs and research. There is no guarantee that it will work for you, but I am reading amazing success stories every day and I want to share my information with you. I hope you will look at all the videos, perhaps read some of the books I have chosen, so you can reach your own conclusions.
